Recipes for Leftover Hard Boiled Eggs from Easter!

We only have one little girl right now.  So we only dyed about 18 eggs.  I can only imagine how many some of the bigger families have!  If I am running out of recipe ideas, you probably are too!

So I did a little searching online and on Pinterest, and here are two different groups of recipes you might want to try:

  5. I like different takes on what to do with hardboiled eggs other than egg salad sandwiches… gotta say, I love to use them in potato salad… but that’s pretty predictable as well I suppose.

    • We love to find things to do with our left over eggs, thanks! My kids fab is to peel them and then slice them with the egg slicer and dip them in ranch.

  12. We generally don’t have a ton leftover since we use a mix of dyed eggs and plastic eggs and my husband is in love with deviled eggs but we do have them in potato salad as well as on regular salads as well!

  15. Yum! I love hardboiled eggs. Thanks for posting. I always sub most of the mayo for plain yogurt (non-fat or low-fat…Greek yogurt if I find it on sale!) to up the nutrition and lower the calories/fat of my egg salad!

  18. We had a hard boiled egg picnic, we made egg salad sandwiches and a hard boiled egg on the side. Our family ate 8 of our 18 colored eggs we are getting there!!

  23. I love making egg salad out of them. Add pickles or pickle relish, mayo and garlic powder then put on toasted bread. Yum! But you can never have too many deviled eggs. Thank you for posting other recipes.

  26. I love making egg salad, deviled eggs, I also like hard boiled eggs in my salads, macaroni salads, potatoes salads. I make those after Easter we have a family Easter get togeither and I like use most of the eggs up then. 🙂

  37. If you get sick of eating hard boiled eggs….turn them into deviled eggs and bring them into your office! They’ll disappear in probably an hour with all the vultures 🙂 Another way to get rid of eggs, cut them up and add them to a salad. You’ll forget you’re eating an egg if you have a bunch of other yummy stuff in there.

  48. Well, now I am craving eggs! How long can boiled eggs stay out of the fridge before they go bad? We colored two dozen, but I was nervous that they had been out too long. So, I threw them all out. ðŸ™

  79. We don’t boil our easter eggs. Just use a food coloring based dye and it is completely safe. We put a big towel on the table to soften the blow for any that get dropped but we didn’t have any accidents this year. Also, just make sure you return them to the fridge quickly. Then we made scrambled eggs and waffles for dinner!

  80. Did you know that you can freeze hard boiled eggs to use for later in salads? But guess what we did with our eggs that had been out in the sun too long? I let my kids have fun chucking them over the fence into the field. They got a kick out of it and we didnt have to get sick on $4 worth of eggs. It was priceless!

  81. Ah – a helpful comment? Got that right here. 🙂 So, whenever I make deviled eggs, I always have leftover yellow yolk filling. I put that in a container and the next day for lunch toast a couple pieces of bread and spread that inside. It’s REALLY good. And you can make those deviled eggs out of the hard boiled eggs you made or if you already made some for Easter dinner:
    Just mix in to taste: miracle whip or mayo, salt, pepper, and a sweet relish.

    chopped eggs,
    chopped boiled potatoes
    chopped boiled carrots
    chopped pickles
    chopped chicken or ham or turkey or hotdogs
    add salt and pepper and mayo as a dressing

    Very yummy!

  86. I like to always have just a handful of hard boiled eggs on hand for a quick snack or to add to a salad year round. For Easter dinner with the family I made sure to volunteer to bring deviled eggs so I could use up all the ones we dyed!

  103. I shocks me to find out that people have left over hard boiled eggs, I can never get enough! But, I guess not everyone loves them as much as me. 🙂 Egg salad is one of my favorites; I find one egg and a TBSP of mayo is the right amount for one sandwich. I add a little bit of a garlic dill seasoning that I have but you could use any combination of your favorite seasonings (garlic pepper, lemon pepper, salt & pepper, seasoned salt, pickle relish, etc). Add just a dash of your seasoning and taste, it’s easier to add more than have too much seasoning. 🙂 I love to serve on toasted whole grain bread with lettuce and tomato slices.

  110. I have a hard time eating boiled eggs, for some reason, but I still made deviled eggs for my family trying a new recipe I found online. I was shocked when I tried it and enjoyed it! So, for me, it’s all about the recipe! This was a basic recipe, with the addition of a tsp of sugar and a tsp of white vinegar to the yolk mixture…. I was very impressed with it! We ate a dozen eggs in just a few minutes this way! 🙂
